Wescoe cafeteria goes underground

Standing next to Chik-Fil-A’s mascot, a Holstein who encourages people to not eat beef, Provost David Shulenburger cut the ribbon last month and opened KU’s newest student eatery.

Wescoe Terrace, the basement-level student cafeteria on Wescoe Hall’s south side, has been remodeled, revamped and now has reopened as The Underground, an expansive food court with a new kitchen and additional 2,500 square feet of dining space.

Already the campus’ most popular dining establishment, the Underground now offers even more offerings including sushi and Asian cuisine, Pizza Hut, Chick-Fil-A and a sandwich and salad bar plus a coffee shop, convenience store and additional seating.

Other recent campus food service additions include a coffee cart at Anschutz Library, a hot dog cart on Wescoe Beach and the Fast Break snack bar in the new Student Recreation Fitness Center. All three opened last fall.
