Forget the candy counter: Union now serves sushi
Last
year the Kansas Union remodeled its food court to meet the
changing tastes of KU's diverse student body. With the construction
complete, The Market is now making another change by introducing
sushi to its lineup. The addition, spurred by student feedback
to recent surveys and industry trend, has been well received
on campus.
Jay Glatz, KU Memorial Unions food service director, solicited
the help of the AFC Corp. in Rancho Dominguez, Calif., to
run the operation. More than 12 varieties of sushi, all prepared
fresh daily, are now offered in The Market. Sushi can also
be made to order.
According
to the proprietor, Tun Naing "David" Thu, more than
60 different variations can be created on site, including
party platters. Three specially trained chefs help prepare
the sushi, which is cooked and chilled before being rolled.
And KU students have eaten it up. Sales for the first few
days exceeded expectations, lending credibility to market
research. Michael Myers, assistant food service director,
says the addition enhances the Market's healthier offerings
in response to customers' frequent requests in surveys. The
sushi counter, located next to the salads and sub sandwiches,
demonstrates how tastes at KU have changed
through the years.
The Market, on level 3 of the Kansas Union, is open from
7 a.m. to 5:30 p.m. Monday through Thursday, 7 a.m. to 5 p.m.
Friday and 11 a.m. to 1:30 p.m. Saturday.
